Tomato Sauce

I don’t buy tomato sauce. It’s so easy and inexpensive to make your own and store-bought sauce is often laced with a lot of salt and/or sugar and heaven knows what else.

I like a simple fresh sauce. Saute half a cup of diced onion, three or four minced cloves of garlic in some olive oil. Toss in whatever herbs and spices tickle your fancy. I like crushed red pepper and some black pepper. Add two cups of diced tomatoes, two cups of crushed tomatoes. It’s easy to add whatever vegetables I have around: red and green peppers, spinach, green beans. I let it all simmer while the pasta cooks. It ain’t fancy, but it’s tasty and I’m glad to know that the sauce isn’t full of salt or preservatives.
